Ka'u Honey Red Bourbon Medium Roast

We’re excited to offer our honey process, also known as a semi-wash or pulp-natural, with our Bourbon varietal. In this process we de-pulp the skin of the cherries then lay them on drying racks with some of the sugary layer still intact. At this stage it ferments while it’s drying creating a yellow/golden look once it’s dried. Picked from a small one-acre portion of our farm, this process is only possible when the conditions are just right. This process calls for windy days, consistent sun and shade so it doesn't dry too quickly or too slowly so flavors are able to develop properly.
